Ingredients: Serves 3-4
1 Lbs. Boneless, Skinless Chicken Breast
4 Wheat Tortillas or Wraps (I use Joseph's Flax Tortillas)
2 oz. Feta Cheese, Crumbled
1 Cup Shredded Lettuce
1 Roma Tomato, Sliced
1 Tsp. Balsamic Vinaigrette
Coat a large skillet with cooking spray. Olive Oil is the best.
Cook chicken over medium heat, just until done.
Thinly slice the chicken.
Layer ingredients on the 4 tortillas with chicken, lettuce, tomato and feta.
Drizzle 1/4 Tsp. on wrap.
Roll up and grill in large, non-stick skillet until nice a crisp. (You can spray cooking spray on each side to make it crispy as well.)
