1 TSP. CANOLA OIL
3 POBALNO PEPPERS, DICED
1 MEDIUM ONION, DICED
1 tsp. CUMIN
1 LBS. BONELESS, SKINLESS CHICKEN BREAST (COOKED AND SHREDDED)
4 CUPS OF REDUCED-SODIUM CHICK BROTH
1-14 Oz. CAN OF GREEN CHILES
1 CUP OF DICED TOMATOS
2 TSP. LIME JUICE
½ CUP REDUCED FAT CHEDDAR CHEESE
¼ CUP CHOPPED CILANTRO
1 MULTI GRAIN TORTILLA, HAVELD AND THINLY SLICED
Preheat oven to 400. Spray a baking sheet with Pam Cooking Spray. Spread the tortilla strips on the baking sheet and coat the strips with cooking spray. Bake approximately 5-7 minutes.
In a saucepan, add the onions and peppers and cook, stirring, until the onions begin to soften, 3 to 5 minutes. Add Cumin and cook, stirring for 1 minute. Add chicken, broth, tomatoes and green chilies with the juice. Bring to a boil, reduce heat and simmer for about 15 to 20 minutes. Remove from heat and stir in the lime juice. Serve each portion topped with some of the baked tortilla strips, cheese and cilantro.
